Instructions
In a bowl, combine warm water, yeast, and sugar. Let sit for 5-10 minutes until foamy.
Mix flour and salt in a large bowl. Add yeast mixture and olive oil, mixing until a shaggy dough forms.
Knead for 10 minutes until smooth. Let rise for 1-2 hours, then refrigerate for 24 hours.
Preheat oven to 500°F with a pizza stone inside.
Shape dough on a floured surface, keeping the edges airy.
Press shredded cheese along the inner sides of a baking pan to create the cheese crown.
Add sauce, mozzarella, Parmesan, and toppings.
Bake for 10-12 minutes until golden and bubbly.
Notes
For an authentic cheese crown, let the cheese melt up the sides of the pan while baking.
