Ingredients
  

Pizza Dough

  • 3 1/2 cups high-gluten flour
  • 1 1/4 cups warm water 110°F
  • 2 1/4 tsp active dry yeast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp sugar

Pizza Sauce

  • 1 can San Marzano tomatoes 28 oz
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1/4 cup fresh basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp sugar

Toppings

  • 2 cups shredded mozzarella low moisture
  • 1/2 cup Parmesan cheese
  • 1 tbsp truffle oil

Instructions
 

  • In a bowl, combine warm water, yeast, and sugar. Let sit for 5-10 minutes until foamy.
  • Mix flour and salt in a large bowl. Add yeast mixture and olive oil, mixing until a shaggy dough forms.
  • Knead for 10 minutes until smooth. Let rise for 1-2 hours, then refrigerate for 24 hours.
  • Preheat oven to 500°F with a pizza stone inside.
  • Shape dough on a floured surface, keeping the edges airy.
  • Press shredded cheese along the inner sides of a baking pan to create the cheese crown.
  • Add sauce, mozzarella, Parmesan, and toppings.
  • Bake for 10-12 minutes until golden and bubbly.

Notes

For an authentic cheese crown, let the cheese melt up the sides of the pan while baking.
