Instructions
In a bowl, combine lime juice, minced garlic, olive oil, salt, and pepper. Coat chicken and marinate for 10 minutes.
Heat a skillet over medium heat. Cook chicken for 6-7 minutes per side until golden and cooked through.
In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
Fluff quinoa with a fork, then stir in black beans and chopped cilantro.
Slice the cooked chicken and serve over quinoa and black bean mixture. Top with avocado slices.
