Ingredients
  

Chicken Marinade

  • 2 chicken breasts boneless, skinless
  • 2 tbsp lime juice
  • 2 cloves garlic minced
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Quinoa & Black Beans

  • 1/2 cup quinoa rinsed
  • 1 cup water
  • 1/2 cup black beans cooked
  • 1 tbsp chopped cilantro
  • 1 avocado sliced

Instructions
 

  • In a bowl, combine lime juice, minced garlic, olive oil, salt, and pepper. Coat chicken and marinate for 10 minutes.
  • Heat a skillet over medium heat. Cook chicken for 6-7 minutes per side until golden and cooked through.
  • In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  • Fluff quinoa with a fork, then stir in black beans and chopped cilantro.
  • Slice the cooked chicken and serve over quinoa and black bean mixture. Top with avocado slices.
