Ingredients
  

Dry Ingredients

  • 3 cups all-purpose flour plus more for dusting
  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt

Wet Ingredients

  • 3/4 cup unsalted butter softened
  • 3/4 cup brown sugar packed
  • 2/3 cup molasses
  • 1 large egg

Instructions
 

  • In a medium bowl, whisk together flour, ginger, cinnamon, nutmeg, and salt.
  • In a large bowl, cream together the butter and brown sugar until fluffy. Add molasses and egg, mixing until combined.
  • Gradually stir in the dry ingredients. Mix until a dough forms. Divide in half, wrap in plastic, and chill for 1 hour.
  • Preheat oven to 350°F (175°C). Roll out dough on a floured surface to 1/4 inch thickness. Cut into shapes using cookie cutters.
  • Place cookies on baking sheet and bake for 8–10 minutes. Let cool before decorating.

Notes

For extra flair, decorate with icing sugar or edible glitter. These cookies are also great as edible gifts!
