  • 15 oz Black Beans canned, rinsed and drained
  • 1 cup Sweet Corn fresh or canned

Dressing

  • 0.25 cup Fresh Cilantro minced
  • 2 whole Limes juiced
  • 3 tablespoons Olive Oil extra virgin
  • 0.5 teaspoon Ground Cumin
  • 1 pinch Sea Salt and Black Pepper to taste

Instructions
 

  • Place your Fullstar vegetable chopper on a flat, stable surface and insert the small dicing blade grid to ensure perfectly bite-sized pieces for the salad.
  • Place the red onion halves flat-side down onto the blade grid and press the lid down swiftly. Repeat with the red and green bell peppers, letting them fall into the 1.2L collection tray.
  • Place the cucumber rounds and Roma tomato halves (flesh-side up) onto the grid and press down to dice cleanly without crushing the soft flesh.
  • Remove the chopping lid and transfer all the perfectly diced vegetables from the collection tray into a large serving bowl.
  • Add the rinsed black beans and sweet corn to the bowl for added texture and protein.
  • In a small jar, shake together the olive oil, lime juice, cilantro, cumin, salt, and pepper. Pour over the salad and toss thoroughly before serving.
