Ingredients

  • 2 boneless, skinless chicken breasts cut into fillets
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 8 oz pasta such as fettuccine or penne
  • 1 tbsp butter
  • 1/4 tsp red pepper flakes optional, for spice
  • 1 tbsp chopped fresh basil for garnish

Instructions
 

  • Cook pasta according to package instructions. Drain and set aside.
  • Season chicken with salt, pepper, and Italian seasoning.
  • Heat olive oil in a large skillet over medium heat. Cook chicken for 4-5 minutes per side until golden and cooked through. Remove from skillet and set aside.
  • In the same skillet, add garlic and sun-dried tomatoes. Sauté for 1 minute.
  • Pour in chicken broth, heavy cream, and butter. Stir to combine.
  • Add parmesan cheese and red pepper flakes. Simmer for 3-4 minutes until sauce thickens.
  • Slice chicken and return it to the skillet. Stir in cooked pasta until well coated.
  • Garnish with fresh basil and serve warm.

Notes

For a spicier version, add extra red pepper flakes. For a lighter option, use half-and-half instead of heavy cream.
