  • 2 cups cheese tortellini fresh or frozen
  • 2 boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 tbsp olive oil for cooking
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/4 tsp paprika
  • 1/2 cup sun-dried tomatoes drained and sliced
  • 2 cloves garlic minced
  • 1 cup chicken broth low sodium
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese shredded
  • 1 cup baby spinach chopped (optional)

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Season the chicken with black pepper, Italian seasoning, and paprika. Cook in the skillet until golden brown and fully cooked, about 6-8 minutes. Remove and set aside.
  • In the same skillet, add butter, minced garlic, and sun-dried tomatoes. Sauté for about 30 seconds until fragrant.
  • Pour in the chicken broth, heavy cream, and seasonings. Stir well and bring to a gentle simmer.
  • Whisk in Parmesan cheese until fully melted and smooth.
  • Return the cooked chicken to the skillet, add the tortellini, and stir gently. Let simmer for 5 minutes, stirring occasionally.
  • Stir in chopped spinach (if using) and let wilt.
  • Garnish with extra Parmesan cheese and serve warm.

Notes

For extra richness, you can add a touch of butter at the end. Serve with garlic bread or a side salad.
