  • 2 pieces skinless chicken breasts organic if possible
  • 1 ripe avocado sliced
  • 1 cup fresh spinach leaves washed and dried
  • 1/2 cup cherry tomatoes halved

Instructions
 

  • Heat a non-stick skillet over medium heat. Season chicken lightly with salt and pepper, then grill each breast for 6–7 minutes per side until fully cooked and golden.
  • While the chicken cooks, slice the avocado, halve the cherry tomatoes, and prepare the spinach leaves.
  • Once the chicken is cooked, let it rest for 2 minutes. Slice it into strips.
  • Assemble the dish: Layer spinach on the plate, top with grilled chicken, avocado slices, and cherry tomatoes. Serve fresh and enjoy immediately.

Notes

You can swap spinach for arugula or add lemon juice for a zesty kick. This recipe is naturally gluten-free, dairy-free, and keto-friendly.
